1. PINEAPPLE COCONUT BANANA PANCAKES
Ingredients:
-1 banana
-2 eggs
-1/4 cup coconut flour
-1/3 cup pineapple puree
-shredded coconut (optional)
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the coconut flour and the pineapple puree* and stir to combine.
3.Add in some shredded coconut for some texture if you want.
4.Heat up a skillet, take a small amount of batter (I used a smaller ice cream scoop) and flatten it to create a round shape.
5.Cook 3-4 mins on each side.
6.Serve warm with shredded coconut and coconut syrup.
*To make the perfect pineapple puree with less liquids in it, take your pineapple and blend it until you have a puree. Then strain it very well. You can use the juice for a smoothie or drink it as it is. Spread the pulp on a bigger plate and let it sundry at least 1 hour, this way the remaining liquids will evaporate and your pineapple puree will be less liquidy.
2. SWEET MAPLE CHAI APPLE BANANA PANCAKES
Ingredients:
-1 banana
-2 eggs
-1/3 cup maple chai apple sauce*
-2/4 cup almond flour
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the almond flour and the maple chai apple sauce* and stir to combine.
3.Heat up a skillet, take a small amount of batter (I used a smaller ice cream scoop) and flatten it to create a round shape.
4.Cook 3 mins on each side.
5.Serve warm with apple sauce and maple syrup on top.
*To make this delicious maple chai apple sauce you only need to chop some apples and add them to a saucepan with 1 cup of water and some lemon juice. Simmer until the apples are tender, then add in your chai spice** and some maple syrup. Stir until combined and simmer for a few more minutes until all the water evaporates. Add the mixture to a blender and blend until you reach a sauce like texture.
**To make the chai spice you only need to combine the following spices:
-1 tbsp ground cinnamon
-1 ½ tsp ground ginger
-1 ½ tsp ground cardamom
-1 ½ tsp ground cloves
-3/4 tsp ground pepper
Keep the mixture in an airtight container in a cool and dry place.
3. CHOCOLATE QUINOA BANANA PANCAKES
Ingredients:
-1 banana
-2 eggs
-1/4 cup quinoa flour
-chocolate chips
-toasted quinoa
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the quinoa flour* and stir to combine.
3.Heat up a skillet, take a small amount of batter.
4.Top with some chocolate chips and toasted quinoa seeds for extra flavor and crunchiness while still cooking.
5.Cook 3 mins on each side.
6.Serve warm.
*You can easily make your own quinoa flour by toasting some quinoa seeds and then grind them. Super simple!
4. MINT BANANA PANCAKES
Ingredients:
-1 banana
-2 eggs
-1/4 cup almond flour
-2 tbsp mint syrup (recipe on the blog!)
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the almond flour and the mint syrup and stir to combine.
3.Heat up a skillet, take a small amount of batter and flatten it to create a round shape.
4.Cook 3 mins on each side.
5.Serve warm with extra mint syrup.
5. BEAT PEAR BANANA PANCAKE
Ingredients:
-1 banana
-2 eggs
-1/4 cup almond flour
-1/4 cup beet pulp
-1/4 cup pear puree
-1 tsp lime juice
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the almond flour ,the beet pulp* and the pear puree** and stir to combine.
3.Heat up a skillet, take a small amount of batter and flatten it to create a round shape.
4.Cook 3 mins on each side.
5.Serve warm.
*To make the beet pulp simply make some beet juice in a juicer and you will have your pulp.
**The easiest way to make pear puree is to add your pear to a blender and blend until it reaches a puree texture. (It works only if your pear is ripe and soft! Otherwise you might want to add it to a saucepan and proceed like with the applesauce)
6. ORANGE BANANA PANCAKE
Ingredients:
-1 banana
-2 eggs
-1/4 cup almond flour
-zest of an orange
-few drops of pure orange extract for extra flavor (optional)
Instructions:
1.Mash the banana and whisk in the eggs.
2.Add in the almond flour ,the orange zest and orange extract and stir to combine.
3.Heat up a skillet, take a small amount of batter and flatten it to create a round shape.
4.Cook 3-4 mins on each side.
