Delicious, chocolatey, creamy coconutty, peppermint flavored cups. And the best: they are topped with crushed candy cane! I think that everything pepperminty is just perfect for Christmas.
Ingredients:
-dark chocolate, melted (or raw cacao powder + coconut oil)
-coconut butter, melted
-2 drops peppermint essential oil, for internal use!!
-optional sweetener of choice: agave, maple syrup, honey
Instructions:
1.Melt the dark chocolate with a little coconut oil. If you don’t have dark chocolate bar or chips at home, use raw cacao powder and melted coconut oil, mix them together until you reach the desired consistency. It’s up to you how much you make of this chocolate mixture, depending on how many cups you want to make.
2.You can add about ¼ cup of sweetener to the chocolate if you want it to be sweeter, but this step is optional.
3.Take some silicone muffin cups and cover the bottom, and a little bit the edges too, with chocolate.
4.Place the cups in the fridge for about 10 minutes to harden.
5.Meanwhile melt the coconut butter. I used about 1 teaspoon for each cup.
6.Add in 2 drops of peppermint essential oil / extract to the coconut butter.
7.Take the cups out of the fridge and add 1 teaspoon of melted coconut butter to each one of them.
8.Place them back into the fridge for about 10 minutes.
9.Take them out again and top with chocolate again.
10.At this point you can sprinkle some crushed candy cane on top to be more festive.
11.Place them back into the fridge for 10 minutes, then they are ready to be enjoyed!
