1. PUMPKIN BOBA CHAI LATTE
Anything pumpkin flavored is a must have in the fall season. If you like pumpkin and latte, you will adore this combination. Even if you don’t, give it a try! Because it tastes amazing and it’s healthier than the store bought / coffee shop ones.
Here’s how to make it:
INGREDIENTS
For the pumpkin “syrup”
-1/4 cup pumpkin puree
-1/4 cup water
-1/4 cup sugar (we used coconut)
-1/2 teaspoon pumpkin spice*
For the chai latte
-1 ¼ cup nut milk of choice (we used the Coconut & Almond from Alpro)
-1 black tea bag (or 1 tablespoon loose black tea leaves or 1 tablespoon ground coffee)
For the cream layer (optional):
-about 1/3 cup of 30% fat cream
-1/2 teaspoon pumpkin spice
-1 teaspoon pumpkin puree
-pinch of turmeric powder to give it a golden color

INSTRUCTIONS:
1. To make the pumpkin syrup, simply add all the ingredients in a saucepan and bring to a simmer. Simmer for a couple of minutes then take off the heat and transfer to a small container. You will be able to use it for at least 3 more lattes.
2. You can use the same pot to heat up the milk. Add in your tea bag, or coffee, and simmer for a few minutes. Take it off the heat and let steep while making the top cream layer.
3.For the top layer (which is optional and you can use milk instead of the cream) add all the ingredients to a glass and using a hand frother froth for about 20-30 seconds.
4.To assemble this latte start with adding the boba (if using) to the bottom of a glass, add about 4 teaspoons of the pumpkin syrup, pour in the chai milk and top with the cream. You can also sprinkle some pumpkin spice on top.
5.Serve warm! Enjoy!
PS: If using tapioca pearls be careful not to choke on them. I personally don’t like eating them with a straw, it’s safer to just scoop them out with a spoon and carefully chew them.
*Pumpkin Spice Mix:
-3 tablespoon cinnamon
-2 teaspoon ground ginger
-2 teaspoon ground nutmeg
-1 ½ teaspoon ground cloves
2. APPLE BOBA CHAI LATTE
It’s so nice to add some apple flavor to your latte. You can either simply use a chopped apple or applesauce, which I think it would taste so much better and would have a more intense flavor.
Here’s how to make this cozy drink:
INGREDIENTS:
-1 ¼ cup nut milk
-1 medium chopped apple (or ¼ cup applesauce, you can find our chai spiced applesauce in the 2nd recipe: link here.
- ¼ cup cream (optional, to make it creamier and to froth better)
-1 teaspoon chai spice**
-1 black tea bag (or 1 tablespoon loose black tea leaves or 1 tablespoon ground coffee)
-maple syrup
Optional: Boba pearls
INSTRUCTIONS:
1. In a saucepan heat up the milk.
2. Add in all the ingredients except the maple syrup and stir well.
3.Bring to a boil, remove from heat and let steep for 20 minutes. This way the apple can release its flavor.
4.To assemble, add your boba (if using) to a glass, pour in the chai latte and using a hand frother froth it up.
5.Drizzle some maple syrup or honey on top and you can also sprinkle some chai spice.
**Chai Spice Mix:
-2 tablespoon ginger powder
-2 tablespoon ground cardamom
-3 tablespoon ground cinnamon
-1 teaspoon ground nutmeg
-1 teaspoon ground cloves
-1 teaspoon ground black pepper
3. S’MORES BOBA CHAI LATTE
This drink is a real treat. It’s not the healthiest but we tried to make it healthier by using sugar free nut milk, dark chocolate, sugar free graham crackers and no any other sweetener, only the marshmallows. Speaking of marshmallows, I saw that there are vegan, somehow healthier ones out on the market so if you can find any of those feel free to use them. If not, regular marshmallows will be just fine, it’s not a crime if you treat yourself every now and then :)
Here’s how to make it:
INGREDIENTS:
-1 ¼ cup nut milk
-2 roasted marshmallows
-1 black tea bag (or 1 tablespoon loose black tea leaves or 1 tablespoon ground coffee)
-cream for the to layer
-1 graham cracker
-melted dark chocolate
-3 mini roasted marshmallows for decorating
INSTRUCTIONS:
1.Heat up the milk in a saucepan.
2.Roast your marshmallows on a longer stick above the oven if you can’t over a fireplace.
3.Add the roasted marshmallows to the milk and stir until they dissolve.
4.Add in the black tea bag, simmer for a couple of minutes, then let steep until you make the cream layer.
5.For the cream layer you only need some cream or milk. No need to add sweetener or spices but you can if you want.
6.Again, if using boba place them on the top of a glass, pour over the marshmallow milk, then the cream.
7.Decorate with mini roasted marshmallows, drizzle of dark chocolate and graham cracker crumbs.
